This SUPER healthy salad will keep you chomping for days. Not only do these ingredients stand-up in the fridge and not get soggy, but it is extremely filling! Part of the reason these ingredients are so hearty, is that not only are they raw (yes, the brussel sprouts are uncooked!), but there is no peeling involved. For a salad that looks like it takes a lot of effort, it is actually straightforward.
This basic salad can be the base of an EVEN MORE AMAZING salad depending on your mood. If you have it, I strongly recommend adding 1/2 cup of crumbled feta to this, as the tangy and creamy texture adds a lot to this crunch-forward salad. Other options could be: avocados or sliced hard-boiled eggs.
Tip: I generally chop my ingredients by hand, but if you don’t have a good, sharp knife to slice the radishes really thin, you can opt for a mandoline or use a food processor attachment.
Pairing tip: This salad is a great sidekick to pork chops or seared scallops.
