Cucumber, pomegranate, edemame, & corn salad – AKA the best winter salad

The color and nutritional value alone (11g of protein/6g fiber per serving!) should make you try this salad, but hey, it also tastes good. This slightly Asian-inspired salad is fantastic with a pan-seared salmon, but if seasame isn’t your jam, I give some suggestions to change it up. Read the notes below!

Also, reminder that stocking up on some key frozen or canned items can make winter salad-making a reality.

Instructions
  1. Toss salad ingredients together in a bowl. If you just boiled the edemame (which the Trader Joe's package recommends for 4 minutes), rinse under cold water, otherwise you will have hot salad. (Nast)
  2. Combine dressing ingredients and stir or shake to fully incorporate.
  3. Pour dressing over salad
  4. Chill in fridge until time to serve (optional)
Recipe Notes

Alternatives:

Don't like seasame? Swap out seasame oil for a squeeze of lemon and fresh or dried dill.

Making this as a main dish or a pot luck? Remove the seasame oil, use lemon juice and dill in the dressing and throw in some poppy seeds for a beautiful texture. Consider adding 1/3 cup of crumbled feta right before serving, after dressing has been added.

Sweet n low? Srsly? Yes! Grab a few of those pink packets during your next Dunks trip and keep them for just this purpose.
